Walnut and parsley pesto

Add a dollop of tasty homemade pesto to a plate of pasta or as a topping for meat or fish. It's an instant dinner winner!


Ingredients
Walnuts
1 cup(s), (100g)
Fresh flat-leaf parsley
1 cup(s)
Capers, rinsed, drained
1 tsp
Salted anchovies in oil, drained
20 g
Fresh lemon rind
1 tbs
Lemon juice
1 tbs
Garlic
1 clove(s)
Olive oil
2 tsp
Instructions

Place walnuts, parsley, capers, anchovy fillets, grated lemon rind, lemon juice and garlic in a food processor.

Process until roughly chopped. With the motor running, gradually add olive oil and process until almost smooth. If pesto is too thick, add a little warm water. Season with salt and freshly ground black pepper.
