Recipe by our WeightWatchers Ambassador Vic. Follow her on Instagram @vicsbowls. If you're a chocolate lover, you'll adore these simple microwave muffins – they're incredibly moist, dense and packed with chocolate. Enjoy tthem with a side of fresh strawberries – it's a match made in heaven!

Ingredients

Kellogg's All-Bran Cereal, Original

1 cup(s)

Wheat biscuit

2 individual

Avalanche Hot Chocolate Mix, 99% Sugar Free

1 sachet(s)

Cocoa powder

2 tbs

Artificial sweetener

¼ tsp, (to taste)

Vanilla essence

1 tsp

Egg(s)

1 medium

Instructions

  1. In a medium bowl, pour 250mls of boiling water over the All Bran, wheat biscuit, drinking chocolate, cocoa, sweetener and vanilla.
  2. Let it soak through for a couple of minutes. Add the egg and beat the mixture until it's all combined.
  3. Pour into sprayed silicone muffin cases.
  4. Microwave on High for 5-6 minutes (time may vary). They're ready when a skewer comes out clean. Carefully take out of the pan and let them cool before serving with fresh strawberries and yoghurt.

Notes

SERVING SUGGESTION: Fresh strawberries and 99% fat free Greek yoghurt to serve.
