Reduced fat oil spread
70 g
Granulated stevia sweetener
100 g
Coconut flour
60 g

Preheat oven to 150°C.

Beat oil spread and sweetener in a medium bowl with electric beaters until pale and creamy. Stir in coconut flour and 1 tablespoon water until just combined.

Divide mixture evenly between 16 holes of a 30 ml capacity silicone mini muffin tray. Bake for about 12 minutes or until pale golden. Completely cool shortbreads in tray before serving.
