Vegetable haloumi burgers in mini pitas

Here’s a great recipe for a vegetarian burger that everyone will enjoy.


Ingredients
Carrot(s)
300 g, grated
Zucchini
1 medium, grated
Red onion
1 small
Frozen corn
50 g, thawed
Firm tofu
150 g, chopped
White bread
2 slice(s), to make 70g fresh breadcrumbs
Egg(s)
1 medium, lightly beaten
Haloumi cheese
100 g, finely chopped
Fresh coriander
1 tbs, chopped
Ground coriander
3 tsp
Pita bread
200 g, (4 x 50g mini pitas)
Mixed salad leaves
50 g
Oil spray
1 x 3 second spray(s)
Instructions

Preheat oven to 200°C. Lightly spray a large baking tray with oil.

Combine carrot, zucchini, onion, corn, tofu, breadcrumbs, egg, cheese and coriander in a large bowl. Season with salt and pepper.

Shape mixture into 8 patties and arrange on prepared tray. Bake for 20-25 minutes or until golden brown.

Warm pita breads and split them open. Fill each with a pattie and salad leaves. Serve immediately.
