Vegan carrot 'bacon'

This clever method takes a humble carrot and turns it into savoury, smoky, chewy-crisp “bacon”.


Ingredients
Carrot(s)
1 large
Soy sauce
1 tsp
Canola oil
2 tsp
Maple syrup
2 tsp
Smoked paprika
¼ tsp
Garlic powder or flakes
⅛ tsp
Seasoning
2 tsp, bacon flavoured (see tip)

Preheat oven to 140°C. Line a baking tray with baking paper.

Using a vegetable peeler, thinly peel carrot into long, even ribbons. Combine soy sauce, oil, syrup, paprika, garlic powder and 1 teaspoon bacon seasoning in a medium bowl. Add carrot ribbons and toss to coat. Set aside to marinate for 5 minutes.

Place carrot in a single layer onto prepared tray. Bake for 20-25 minutes, turning half way through, or until golden and crisp. Sprinkle with remaining bacon seasoning and season with salt. Serve.
