This clever method takes a humble carrot and turns it into savoury, smoky, chewy-crisp “bacon”.

Ingredients

Carrot(s)

1 large

Soy sauce

1 tsp

Canola oil

2 tsp

Maple syrup

2 tsp

Smoked paprika

¼ tsp

Garlic powder or flakes

tsp

Seasoning

2 tsp, bacon flavoured (see tip)

Instructions

  1. Preheat oven to 140°C. Line a baking tray with baking paper.
  2. Using a vegetable peeler, thinly peel carrot into long, even ribbons. Combine soy sauce, oil, syrup, paprika, garlic powder and 1 teaspoon bacon seasoning in a medium bowl. Add carrot ribbons and toss to coat. Set aside to marinate for 5 minutes.
  3. Place carrot in a single layer onto prepared tray. Bake for 20-25 minutes, turning half way through, or until golden and crisp. Sprinkle with remaining bacon seasoning and season with salt. Serve.

Notes

TIPS: You can find vegan bacon seasoning in the spice section at major supermarkets. To get even slices of carrot, press firmly with your vegetable peeler. As you get closer to the core, turn the carrot over and peel from the other side. It helps to place carrot horizontally on the edge of your kitchen bench, so your hand doesn’t knock into the bench when peeling. Use any leftover carrot as crudites for dipping in your favourite dip.
