Veal steaks with braised mushrooms and cherry tomatoes
Lean veal leg steak
450 g, (Buy 500g) fat trimmed
1 medium, finely chopped
200 g, button variety, halved
2 clove(s), thinly sliced
Fresh flat-leaf parsley
⅓ cup(s), chopped
- Heat 2 tsp oil in a large frying pan on high. Cook veal for 1-2 minutes each side or to your liking. Transfer to a plate and cover with foil. Set aside for 5 minutes to rest.
- Heat remaining oil in same pan on medium-high. Cook onion, mushrooms, stirring for 3-4 minutes or until mushrooms are golden. Add tomatoes and garlic and cook, stirring for 2 minutes or until tomatoes start to soften. Add vinegar and cook for 1 minute. Stir in parsley.
- Season and serve veal with mushroom mixture.
