Vanilla hotcakes with warm fruit compote

Start the day on a sweet note with our café-style pancakes topped with hot stewed fruit

Ingredients

White self-raising flour

1 cup(s), (150g)

Caster sugar

¼ cup(s), (55g)

Egg(s)

1 medium

Vanilla yoghurt, 99% fat-free, no added sugar

300 g

Rice bran oil

2 tsp

Skim milk

½ cup(s), (125ml)

Dried fig(s)

50 g, (3 figs)

Currants

20 g

Dried cranberries

20 g

Orange rind

½ tsp

Instructions

  1. Sift flour and sugar into a large bowl, then make a well in centre. In another bowl, beat egg, 1 tub NESTLÉ DIET Vanilla Yoghurt, oil and milk, then pour into well, whisking until smooth.
  2. Heat a large, oiled non-stick frying pan over medium heat. Pour in four 13 cups (80ml) batter to make 4 hotcakes. Cook for 1–2 minutes or until bubbles appear, then turn and cook for another minute. Transfer to plate, cover to keep warm and repeat to make 12 hotcakes.
  3. Place all the fruit in a small non-stick frying pan. Add ½ cup (125ml) water and bring to the boil. Reduce heat and simmer, uncovered, for 5 minutes or until fruit is plump. Arrange 2 hotcakes on each serving plate. Top with remaining NESTLÉ DIET Vanilla Yoghurt and warm fruit compote.
