Vanilla hotcakes with warm fruit compote
White self-raising flour

99% fat-free vanilla yoghurt, sweetened
Rice bran oil

- Sift flour and sugar into a large bowl, then make a well in centre. In another bowl, beat egg, 1 tub NESTLÉ DIET Vanilla Yoghurt, oil and milk, then pour into well, whisking until smooth.
- Heat a large, oiled non-stick frying pan over medium heat. Pour in four 13 cups (80ml) batter to make 4 hotcakes. Cook for 1–2 minutes or until bubbles appear, then turn and cook for another minute. Transfer to plate, cover to keep warm and repeat to make 12 hotcakes.
- Place all the fruit in a small non-stick frying pan. Add ½ cup (125ml) water and bring to the boil. Reduce heat and simmer, uncovered, for 5 minutes or until fruit is plump. Arrange 2 hotcakes on each serving plate. Top with remaining NESTLÉ DIET Vanilla Yoghurt and warm fruit compote.
