Sneaky vegies in the patties are not only good for you, they add extra flavour and texture as well!

Ingredients

Extra lean beef mince, raw

200 g

Brown onion

½ medium, coarsely grated

Carrot(s)

1 small, coarsely grated

Zucchini

1 small, coarsely grated

Shortcut bacon

90 g, (4 x 25g) fat trimmed

Olive oil

1 tsp

Extra light cheddar cheese

68 g, (4 x 17g slices)

Wholemeal bread roll

280 g, (4 x 70g) split

Iceberg lettuce

4 leaf, leaves, shredded

Tomato(es)

2 medium, sliced

Instructions

Place the mince, onion, carrot and zucchini in a bowl. Season with salt and pepper. Use clean hands to mix well. Divide into 4 portions. Shape each portion into an 8cm-diameter patty. Place on a large plate. Place in the fridge for 20 minutes to chill.

Heat a large non-stick frying pan over medium heat. Cook the bacon for 2 minutes each side or until browned. Transfer to a plate. Cover with foil to keep warm.

Heat the oil in the same frying pan over medium heat. Cook the patties for 5 minutes each side or until cooked through. Top with the cheese. Cover the pan and cook for a further 1-2 minutes or until the cheese melts.

Lightly toast the rolls. Divide the lettuce, tomato, bacon and patties among the roll bases. Top with the roll lids.
