Turmeric, honey and sesame marinated beef with warm brown rice salad

Ingredients

Ground cumin

1 tsp, seeds, toasted, crushed

Ground turmeric

1 tsp

Fresh ginger

2 tsp, finely grated

Honey

1 tsp

Sesame oil

1 tsp

Reduced salt soy sauce

2 tbs

Lemon juice

1 tbs

Beef sirloin steak, raw

400 g, (Buy 2 x 250g) fat trimmed

Red capsicum

1 medium, chopped

Snow peas

150 g, thinly sliced

Cooked brown rice

2 cup(s), (340g)

Currants

2 tbs

Oil spray

2 x 3 second spray(s)

Instructions

  1. Combine cumin, turmeric, ginger, honey, sesame oil and half the soy sauce and lemon juice in a shallow dish. Add beef and turn to coat. Cover. Refrigerate for 20 minutes.
  2. Lightly spray a chargrill or barbecue with oil and heat over medium-high heat. Cook beef for 2 minutes each side or until cooked to your liking. Transfer to a plate. Cover with foil. Set aside to rest for 5 minutes. Thinly slice.
  3. Meanwhile, lightly spray a large non-stick frying pan with oil. Heat over high heat. Cook capsicum and snow peas, stirring, for 1-2 minutes or until almost tender. Add rice, currants and remaining soy sauce and lemon juice. Cook, stirring, for 1-2 minutes or until heated through. Serve beef on warm rice salad.

Notes

TIP: Crush cumin seeds with a mortar and pestle or in a snaplock bag with a rolling pin. Fresh turmeric looks similar to fresh ginger, only it’s smaller and orange in colour. Peel off its outer skin before grating, using disposable gloves. If you can’t find it, you can substitute with 1 teaspoon ground turmeric.
