Turkish-style spiced lamb pide

Make your own pide for dinner tonight. All you need for the dough is flour and yoghurt. Filled with spicy lamb mince and topped with fresh mint and rocket.


Ingredients
White self-raising flour
1 cup(s), (150g)
99% fat-free, plain or natural yoghurt, unsweetened
¾ cup(s), (180g)
Lean lamb mince
300 g
Red onion
1 medium, grated
Ground cumin
3 tsp
Ground coriander
2 tsp
Tomato(es)
2 medium, finely chopped
Low fat tzatziki
⅓ cup(s), (80g)
Pine nuts
2 tbs, toasted
Fresh mint
1 cup(s), leaves torn
Rocket
4 cup(s), leaves (120g)
Oil spray
2 x 3 second spray(s)
Instructions

Place flour in a medium bowl. Add yoghurt and mix until a soft dough forms. Turn onto a lightly floured surface and knead until smooth. Wrap in plastic and set aside.

Meanwhile, preheat oven to 240°C. Lightly spray a large frying pan with oil and heat over high heat. Cook mince, onion, cumin and coriander, stirring to break up lumps, for 3 minutes or until browned and fragrant. Add tomato and cook, stirring, for 1 minute or until tomato softens slightly. Remove from heat and spread onto oven tray to cool.

Lightly spray 2 baking trays with oil. Divide dough into quarters. Roll each quarter on a lightly floured surface into an oval shape (15cm x 30cm). Place on oven trays. Spread lamb over dough leaving a 1cm border. Pull edges slightly over mince and pinch ends together.

Bake for 12-15 minutes or until well browned. Top pide with tzatziki, pine nuts, mint and rocket.
