Turkish delight choc-chip ice-cream

For a twist on cookies and cream ice-cream, just add a few pieces of pretty pink turkish delight.

Ingredients

Reduced fat vanilla ice cream

500 g

Biscuits, chocolate chip, reduced-fat

50 g

- Middle Eastern Cuisine Turkish delight

60 g, finely chopped

Fresh strawberries

250 g, hulled, chopped

Instructions

  1. Place ice-cream in a bowl. Add cookies and Turkish delight and stir to combine. Transfer mixture to a 20cm x 9cm loaf tin. Cover with foil and freeze for 3 hours or until firm.
  2. Scoop ice-cream into four ¾-cup (185ml) capacity serving glasses and top with strawberries. Serve.

Notes

TIP: Dip a knife or scissors into plain flour before cutting Turkish delight to stop it sticking to the blade.
