Turkey burritos

A shake of a burrito spice sachet is all that shredded turkey needs to give it a Mexican flavour that begs to be wrapped in a tortilla with salad then gobbled up!


Ingredients
Red onion
1 medium, finely chopped
Reduced-salt taco seasoning mix
2 tbs
Canned diced tomatoes
1 400g can, (1 x 400g can)
Skinless turkey breast, baked or roasted
350 g
Flour tortilla(s)
320 g, (8 x 40g tortillas)
Mixed salad leaves
80 g
Fresh coriander
2 tsp, leaves
Instructions

Lightly spray a large saucepan with oil and heat over medium-high heat. Cook onion, stirring, for 5 minutes or until softened. Add spice mix and cook, stirring, for 1 minute or until fragrant. Add tomatoes and ½ cup (125ml) water and bring to the boil. Reduce heat to low. Simmer, stirring occasionally, for 5 minutes or until sauce is thick. Stir in turkey.

Heat tortillas following packet instructions. Place tortillas on a board and top each evenly with salad leaves, corainder and turkey mixture. Fold in base, then roll to enclose filling. Serve.
