Truffle and cheese go together beautifully. Make this grilled cheese toastie on a rainy day and be utterly comforted!

Ingredients

Wholemeal bread

8 slice(s), (8 x 35g slices)

Truffle mustard

1 tbs

Low-fat mayonnaise

1 tbs

Provolone cheese

40 g, grated

Extra light cheddar cheese

40 g, grated

Reduced fat oil spread

3 tsp

Spread each slice of bread evenly with truffle mustard and mayonnaise. Season with pepper. Sprinkle provolone and cheddar over 4 slices of bread and top with remaining 4 slices to make 4 sandwiches.

Heat half the oil spread in a large frying pan over medium-high heat and melted. Carefully place 2 sandwiches in the pan and press down with a spatula. Cook for 5 minutes on each side, or until bread is toasted and cheese has melted. Repeat process with remaining oil spread and sandwiches. Cut toasted sandwiches in half diagonally and serve.
