When your oats needs a makeover, try this tropical-inspired recipe. It's full of delicious goodness from fresh, juicy fruit, toasted coconut, and chia seeds. Chia seeds are loaded with protein and fiber and can absorb up to nine times their weight in liquid. They develop a thick, viscous texture when soaked, somewhat like that of tapioca. If you don't have pineapple or kiwi, consider blueberries and chopped strawberries instead.


Ingredients
Pure coconut water
2 cup(s), (500ml)
Quick oats
90 g, (1 cup)
Chia seeds
2 tbs
Pineapple
1 cup(s), (230 g), finely chopped
Kiwifruit
1 cup(s), (185 g), finely chopped
Coconut chips
¼ cup(s), (20 g), roasted
Instructions

Bring coconut water to the boil in a medium saucepan. Add oats and seeds. Reduce heat and simmer, stirring occasionally, for 5 minutes or until oats are cooked and mixture has thickened.

Serve porridge topped with fruit and coconut.
