Trio of peas with bacon and leek

This is a lean green veg machine! A great side dish with the flavours of salty bacon and fresh mint.

Ingredients

Olive oil

1 tbs

Shortcut bacon

125 g, finely chopped

Leek

1 whole, pale section only, thinly sliced

Frozen green peas

2 cup(s), (240g)

Sugar snap peas

150 g

Snow peas

150 g

Chicken stock cube

¼ individual, to make ¼ cup (60ml) liquid stock

Fresh mint

1 tbs, chopped

Instructions

Heat the oil in a large saucepan or large, deep-sided frying pan over medium heat. Cook the bacon, stirring occasionally, for 4 minutes or until golden. Add the leek and cook, stirring often, for 3 minutes or until soft.

Add the combined peas and liquid stock. Cook, covered, for 4 minutes or until the peas are just tender. Season with pepper. Stir in the mint.
