Tray bake cauliflower fried rice with eggs

This tray bake meal comes together fast thanks to frozen convenience foods but you can swap in fresh cauliflower rice, if you prefer.

Ingredients

Cauliflower rice (100% cauliflower)

500 g, frozen (no need to thaw)

Vegetable mix, non-starchy, frozen

400 g, (no need to thaw)

Edamame beans

1 cup(s)

Egg(s)

4 large

Soy sauce

1½ tbs

Green shallot(s)

⅓ cup(s), chopped

Instructions

Place a large shallow-sided baking tray or roasting pan in the oven and preheat oven to 200°C.

When oven reaches temperature, carefully remove the hot tray from the oven. Add cauliflower rice, mixed vegetables and edamame and mix. Bake vegetables for 5 minutes, then remove tray from oven and use a spoon to make 4 indentations in the vegetable mixture for the eggs. Crack an egg into each indentation. Bake for a further 9-11 minutes, or until eggs are cooked to your liking.

To serve, drizzle with soy sauce and sprinkle with shallots.
