Toasted rye with spicy avocado, salmon and snow pea shoots

Piled high with slices of succulent smoked salmon on a layer of creamy avocado, this gourmet sandwich is fresh and fabulous.

Ingredients

Avocado

½ medium

Fresh chives

1 tbs, chopped

Lime juice

2 tsp

Dried chilli flakes

½ tsp, (optional)

Dark rye bread

2 slice(s)

Lebanese cucumber

1 medium, thinly sliced

Smoked salmon

150 g

Snow peas

20 g, trimmed

Instructions

Combine avocado, chives, juice and chilli in a small bowl. Mash with a fork until almost smooth. Season with salt and freshly ground black pepper.

Toast bread. Spread toast with avocado mixture. Serve topped with cucumber, salmon and snow pea shoots.
