For a sensational starter, team freshly shucked oysters with the authentic salty, sweet and sour flavours of Thailand.


Ingredients
Fresh lemongrass
2 tsp, finely chopped
Fresh red chilli
1 whole, finely chopped
Lime juice
¼ cup(s), (60ml)
Fish sauce
2½ tbs
Brown sugar
1 tbs
Reduced salt soy sauce
1 tbs
Kaffir lime leaves
2 individual, finely chopped
Fresh coriander
1 tbs, finely chopped
Oysters
24 individual, Sydney rock variety
Lime(s)
1 medium, wedges to serve
Instructions

Combine lemongrass, chilli, 2 tablespoons juice, 1½ tablespoons fish sauce and 2 teaspoons brown sugar in a small bowl. Stir until sugar has dissolved.

Combine soy sauce, lime leaf, coriander and remaining juice, fish sauce and brown sugar in a small bowl. Stir until sugar has dissolved.

Arrange oysters on a serving platter. Top half with lemongrass mixture and the remaining oysters with coriander mixture. Serve with lime wedges.
