Ingredients

Skinless salmon

560 g, (4x140g fillets)

Fresh red chilli

1 whole, thinly sliced

Fish sauce

2 tsp

Lime rind

1 tsp, finely grated

Lime juice

1 tbs

Fresh ginger

1 tsp, finely grated

Fresh coriander

cup(s), leaves

Instructions

  1. Preheat a grill on high heat. Season salmon with salt and pepper. Place salmon flesh side up on a foiled-lined grill tray. Grill salmon 5cm from heat source for 3 minutes, without turning, until golden and almost cooked through.
  2. Meanwhile, combine chilli, fish sauce, lime rind and juice and ginger in a small bowl. Serve salmon drizzled with dressing and sprinkled with coriander.

Notes

SERVING SUGGESTION: Salad of mixed Asian salad leaves, thinly sliced cucumber, bean sprouts and fresh coriander and mint leaves.
