Skinless chicken breast
120 g, cut into strips
1 clove(s), crushed
2 tsp, finely grated
1 tbs, (4 sprigs chopped)
½ medium, finely chopped
4 individual, halved lengthways
- Combine chicken, garlic, ginger, coriander, lemongrass and soy sauce in a small bowl.
- Place snow peas, capsicum and corn in a microwave steamer with 1 teaspoon water. Season with salt and pepper. Close the steamer and microwave on High (100%) for 1 minute.
- Arrange chicken mixture evenly on top of vegetables and drizzle over any remaining marinade. Close steamer and microwave on High (100%) for 3 minutes or until chicken is cooked.
