Ingredients

Skinless chicken breast

120 g, cut into strips

Garlic

1 clove(s), crushed

Fresh ginger

2 tsp, finely grated

Fresh coriander

1 tbs, (4 sprigs chopped)

Lemongrass paste

1 tsp

Soy sauce

2 tsp

Snow peas

100 g

Red capsicum

½ medium, finely chopped

Baby corn

4 individual, halved lengthways

Instructions

  1. Combine chicken, garlic, ginger, coriander, lemongrass and soy sauce in a small bowl.
  2. Place snow peas, capsicum and corn in a microwave steamer with 1 teaspoon water. Season with salt and pepper. Close the steamer and microwave on High (100%) for 1 minute.
  3. Arrange chicken mixture evenly on top of vegetables and drizzle over any remaining marinade. Close steamer and microwave on High (100%) for 3 minutes or until chicken is cooked.

Notes

TIP: Use fresh lemongrass Instead of paste. Swap chicken for skinless turkey breast. Add ½ cup (85g) cooked egg noodles per serve.
