These crispy cutlets are infused with fresh ginger and garlic to give it a burst of spiciness.

Ingredients

Egg(s)

1 medium, lightly beaten

Soy sauce

2 tbs

Garlic

1 clove(s), crushed

Dried breadcrumbs

1 cup(s), (70g), fresh made from white bread

Fresh chives

2 tbs, finely chopped

Pork loin cutlet, raw

480 g, (buy 4*150 lean cutlets), fat trimmed

Oil spray

1 x 3 second spray(s)

Instructions

  1. Preheat oven to 220°C or 200°C fan-forced. Line a baking tray with baking paper.
  2. Pour egg into a shallow bowl. Whisk in soy sauce, ginger, garlic and 1 tablespoon water until combined. Combine breadcrumbs and chives on a plate.
  3. Dip 1 pork cutlet into egg mixture, then toss in breadcrumbs to coat. Place on prepared tray. Repeat with remaining cutlets, egg mixture and breadcrumbs. Lightly spray cutlets with oil. Bake, turning once, for 15 minutes or until cooked through. Serve with lemon wedges.

Notes

SERVING SUGGESTION: Steamed baby carrots and green beans, plus steamed baby (chat) potatoes. TIP: Uncooked crumbed cutlets suitable to freeze for up to 2 months.
