Sweet potato and cumin mash

An excellent, tangy mash that’ll tingle the tastebuds, this dish is guaranteed to make you see mash in a different light. Comfort food never tasted so good


Ingredients
Potato(es)
270 g, (300g desiree), peeled, chopped
Orange sweet potato (kumara)
350 g, (400g), peeled, chopped
Ground cumin
1 tsp, toasted
Garlic
1 clove(s), crushed
Skim milk
2 tbs
Green shallot(s)
1 individual, thinly sliced
Instructions

Boil, steam or microwave potatoes and orange sweet potato (kumara) until tender. Drain. Place in a large bowl and mash until almost smooth.

Meanwhile, toast ground cumin in a small, dry non-stick frying pan over medium heat for 30 seconds or until fragrant.

Add cumin, garlic clove, milk and shallot to mash. Season with salt and freshly ground black pepper. Stir to combine. Serve topped with extra green shallot.
