Sweet potato and cumin mash

An excellent, tangy mash that’ll tingle the tastebuds, this dish is guaranteed to make you see mash in a different light. Comfort food never tasted so good
270 g, (300g desiree), peeled, chopped
Orange sweet potato (kumara)
350 g, (400g), peeled, chopped
1 tsp, toasted
1 clove(s), crushed
1 individual, thinly sliced
- Boil, steam or microwave potatoes and orange sweet potato (kumara) until tender. Drain. Place in a large bowl and mash until almost smooth.
- Meanwhile, toast ground cumin in a small, dry non-stick frying pan over medium heat for 30 seconds or until fragrant.
- Add cumin, garlic clove, milk and shallot to mash. Season with salt and freshly ground black pepper. Stir to combine. Serve topped with extra green shallot.
