This easy sweet and spicy stir-fry is ready to eat in less than 20 minutes!

Ingredients

Canola oil

1 tbs

Pork fillet or tenderloin, raw

400 g, (Buy 500g) fat trimmed, thinly sliced

Sweet chilli sauce

¼ cup(s), (60ml)

Oyster sauce

¼ cup(s), (60ml)

Lime juice

2 tbs

Broccolini

1 bunch(es), cut into 4cm lengths

Choy sum

1 bunch(es), bok choy, cut into 4cm lenths

Sugar snap peas

100 g

Green shallot(s)

2 individual, thinly sliced

Fresh coriander

¼ cup(s), leaves

Instructions

  1. Heat oil in a wok over high heat. Add pork and stir-fry for 2-3 minutes or until browned. Add chilli sauce, oyster sauce and juice and bring to the boil.
  2. Add broccolini, choy sum and sugar snap peas and stir-fry for 3-4 minutes or until just tender. Serve topped with shallots and coriander leaves.

Notes

SERVING SUGGESTION: Steamed rice.TIP: You can use lean chicken breast fillet or beef fillet instead of pork. VARIATION: Add 1 garlic clove (crushed) with vegies in Step 2 or swap broccolini for 1 carrot (sliced).
