Strawberry nice cream

You only need three ingredients to make this creamy and refreshing dessert. It's perfect when you want something cold and sweet to snack on. To get organised, freeze the banana a day ahead so you can prepare and serve the ‘nice’ cream in minutes.
2 large, ripe
1½ cup(s), (240g)
Vanilla bean extract, alcohol free
- Peel bananas, cut into 2cm slices and place in a single layer in a reusable snap-lock bag or container. Seal and freeze for about 3 hours, or until frozen solid.
- Process frozen banana and strawberries in a large food processor, stopping occasionally to scrape down the side of processor bowl with a rubber spatula, until the mixture is smooth and creamy. Add vanilla extract and pulse to combine.
- Serve immediately for soft serve-style, or for a firmer texture, transfer mixture to a container and freeze until ready to serve. Allow to soften for about 10 minutes at room temperature before scooping into bowls.
SERVING SUGGESTION: Extra fresh strawberries and fresh mint sprigs. TIP: Frozen raspberries or mixed frozen berries can be used instead of strawberries.
