This gorgeous red fruit salad tastes equally well chilled or at room temp; in fact, it gets better as it sits, allowing the fruit time to absorb the flavours of the ginger, lime juice, and mint with the grated ginger adding surprising heat. We call it strawberry salad, but there's also a nice amount of watermelon mixed in too. The recipe calls for using a melon baller to scoop out the melon, but you can just as easily cut it into bite-size cubes.

Ingredients

Lime juice

2 tsp

Fresh ginger

2 tsp, grated

Dried mint

½ tsp

Watermelon

680 g, seedless

Fresh strawberries

340 g, hulled and halved

Fresh basil

1 tbs, leaves, finely shredded (12 leaves)

Instructions

  1. In a large serving bowl, mix lime juice, ginger, mint, and a pinch of salt. Using melon baller, scoop 1-inch balls from watermelon, leaving white and green rind behind. (You can also cut watermelon into cubes.) Add watermelon and strawberries to bowl.
  2. Add basil into salad. Let stand for 30 minutes at room temperature, or cover and refrigerate for up to 4 hours.
