Wrap your filling in baby cos lettuce leaves and take a bite. Sit back and let the flavours work their magic – expect murmers of delight

Ingredients

Sesame oil

2 tsp

Green shallot(s)

4 individual, thinly sliced

Green capsicum

1 medium, finely chopped

Pork mince, raw

500 g

Lime juice

¼ cup(s), (60ml)

Canned water chestnut, rinsed, drained

227 g, finely chopped

Sweet chilli sauce

cup(s), (80ml)

Soy sauce

2 tbs

Hoisin sauce

1 tbs

Carrot(s)

2 medium, grated

Celery

1 stick(s), thhinly sliced

Cos lettuce

280 g, (baby)

Instructions

  1. Heat a wok over high heat. Add oil and heat for 5 seconds. Add shallots and capsicum and stir-fry for 2–3 minutes or until softened. Add pork and stir-fry, breaking up any lumps, for 5 minutes or until browned.
  2. Add juice, water chestnuts and sweet chilli, soy and hoisin sauces and stir-fry for 2 minutes or until heated through. Stir in carrot and celery. Spoon pork mixture into lettuce leaves. Serve.

Notes

SERVING SUGGESTION: steamed Brown rice.TIP: You can use lean chicken mince instead of pork.
