Steamed fish with veggies and bacon

The preparation for this elegant dish is so easy, plus clean-up is a cinch! Perfect for a special occasion, serve with a garden salad and crusty bread (contains gluten) for mopping up the delicious juices.


Ingredients
Olive oil
2 tsp
Shortcut bacon
90 g, (buy 100g), fat trimmed, chopped
Baby potatoes
250 g, chat variety, thinly sliced
Onion
1 medium, sliced
Garlic
2 clove(s), crushed
Zucchini
1 medium, halved lengthways, thickly sliced diagonally
Golden zucchini, raw
1 medium, halved lengthways, thickly sliced diagonally
Tomato(es)
3 medium, roma variety, chopped
Dry-style white wine
⅓ cup(s), (80ml)
Skinless white fish, raw
720 g, (4 x 180g)
Instructions

Heat oil in a large, deep pot or saucepan over medium-high heat. Cook bacon for 2-3 minutes, stirring, until lightly browned.

Add potatoes and onion and cook, stirring, for 3-4 minutes or until onion softens slightly.

Add garlic, zucchinis and tomatoes and cook, stirring, for a further 3 minutes. Season with salt and pepper, stir in wine and bring to the boil.

Season fish with salt and pepper, then arrange in a single layer over vegetable mixture. Reduce heat and cover with lid. Simmer, covered for 7-8 minutes, or until fish is just opaque in the centre and potatoes are tender.

Transfer fish to 4 plates or shallow bowls, then spoon vegetables evenly around fish.
