Steak and Guinness pie

Nothing beats a pie made with flaky pastry. The addition of Guinness makes this an Irish classic.


Ingredients
Oil spray
2 x 3 second spray(s)
Beef chuck steak, raw
320 g, (buy 400g), fat trimmed, chopped
Plain flour
1¼ cup(s), (185g)
Brown onion
1 medium, sliced
Celery
1 stick(s), sliced
Carrot(s)
200 g, sliced
Mushrooms
500 g, sliced
Draught beer
500 ml
Dried bay leaf
2 whole
Brown sugar
1 tbs
Reduced fat oil spread
50 g
Instructions

Toss the steak pieces in 2 tbs of plain flour. Lightly spray a deep saucepan with oil. Add the steak and fry for 5 minutes.

Add the onion, celery and carrots to the pan. Cook for 10 minutes, adding a little water if they start to stick. Add the mushrooms and cook for 5 minutes. Add in the Guinness, bay leaves and brown sugar. Cover and simmer for 2 hours, until the beef is tender.

Sift 150g flour into a bowl and rub in the spread to make crumbs. Stir in 3-4 tbs water to make pastry, wrap in cling wrap and chill for 30 minutes. Roll out the dough on a work surface dusted with 1 tbs flour. Slice into strips. Spoon the beef into an ovenproof dish and lay the strips over to form a lattice. Lightly spray with oil and bake at 200°C for 30 minutes.
