Spinach, walnut and feta rolls

Ingredients
Brown onion
1 medium, finely chopped
Baby spinach
200 g
Reduced fat feta cheese
100 g
Walnuts
25 g, finely chopped
Panko breadcrumbs
40 g
Filo pastry
2 sheet(s)
Sesame seeds
½ tsp
Oil spray
2 x 3 second spray(s)

Lightly spray a large non-stick frying pan with oil and heat over medium heat. Cook onion for 3-4 minutes, until softened, adding a splash of water if needed to stop it catching. Add spinach and cook, stirring, until wilted. Transfer to a colander and press to remove any excess liquid. Transfer to a medium bowl and cool. Add feta, walnuts and breadcrumbs, season with pepper and stir to combine.

Preheat oven to 200°C and line a baking tray with baking paper. Lightly spray 1 filo sheet with oil and top with the other filo sheet. Spoon spinach mixture along one long side of pastry, then roll up like a sausage roll and cut into 8 even pieces.

Place rolls, seam-side down, on prepared tray. Lightly spray with oil and scatter over the sesame seeds. Bake for 20 minutes, or until pastry is crisp and golden.
