Spicy turkey and pineapple stir-fry

Stir fry vegetables

850 g

Peri peri sauce

25 g

Skinless turkey breast

400 g, strips, fat trimmed, thinly sliced

Canned pineapple in natural juice, drained

225 g

No added sugar pineapple juice

2 tbs, reserved from canned pineapple

Green shallot(s)

1 individual, cut into thin strips

Oil spray

2 x 3 second spray(s)


  1. Steam or microwave vegetable stir-fry mix until just tender. Drain.
  2. Meanwhile, lightly spray a large deep frying pan with oil and heat over high heat. Cook turkey, stirring, for 3-4 minutes or until browned and cooked through. Add Peri Peri sauce and cook, stirring, for 1 minute or until coated.
  3. Add pineapple, vegetables and juice. Cook, stirring, for 2 minutes or until heated through. Serve sprinkled with shallot.


SERVING SUGGESTION: Steamed brown rice. TIP: You can use any type of frozen vegetable mix.
