Spicy turkey and pineapple stir-fry
Stir fry vegetables
Peri peri sauce
Skinless turkey breast
400 g, strips, fat trimmed, thinly sliced
Canned pineapple in natural juice, drained
No added sugar pineapple juice
2 tbs, reserved from canned pineapple
1 individual, cut into thin strips
2 x 3 second spray(s)
- Steam or microwave vegetable stir-fry mix until just tender. Drain.
- Meanwhile, lightly spray a large deep frying pan with oil and heat over high heat. Cook turkey, stirring, for 3-4 minutes or until browned and cooked through. Add Peri Peri sauce and cook, stirring, for 1 minute or until coated.
- Add pineapple, vegetables and juice. Cook, stirring, for 2 minutes or until heated through. Serve sprinkled with shallot.
