Spicy tofu parcels

Ingredients
Firm tofu
300 g, drained, cut into 2cm cubes
Red capsicum
1 medium, cut into 1cm pieces
Green capsicum
1 medium, cut into 1cm pieces
Fresh red chilli
1 whole, long, deseeded, finely chopped
Soy sauce
2 tbs, (see tip)
Sesame oil
1 tbs
Chilli powder
½ tsp
Smoked paprika
1 tsp
Instructions

Place all ingredients in a large bowl. Season with pepper and toss to coat. Stand for 15 minutes.

Preheat a chargrill or barbecue over high heat. Cut four 30 x 50cm rectangles of foil. Place one-quarter of the tofu mixture and some marinade in the centre of each piece of foil. Fold foil to enclose filling. Cook parcels for 10-12 minutes or until vegetables are tender. Serve.
