Spicy sesame noodles

This is a refreshing twist on a noodle salad with a creamy Asian dressing and spiralised zucchini.


Ingredients
Plain, dry instant noodles
140 g
Zucchini
2 large, spiralised
Green shallot(s)
1 individual, thinly sliced
Sesame seeds
2 tsp
Dried chilli flakes
½ tsp
Tahini
2 tbs
99% fat-free, plain Greek yoghurt, unsweetened
2 tbs
Soy sauce
1 tbs
Honey
1 tsp
Fresh ginger
2 tsp, finely grated
Garlic
1 clove(s), crushed
Sambal oelek
1 tsp
Instructions

Place noodles and zucchini in a large heatproof bowl. Cover with boiling water and soak for 3 minutes until softened. Drain, rinse under cold water, drain well and transfer to a large bowl.

Meanwhile, to make sauce, whisk all ingredients with 2 tablespoons water in a medium bowl. Pour sauce over noodles and toss to coat.

Divide noodle mixture among 4 bowls. Serve sprinkled with shallots, sesame seeds and chilli flakes.
