Spicy pork and veggie lettuce wraps

This recipe is a taste sensation —just stir together some key store-bought sauces for a dinner that stands up to anything you’d order in or eat out.


Ingredients
Hoisin sauce
2 tbs
Sriracha sauce
1½ tbs
Soy sauce
1 tbs
Sunflower oil
2 tsp
Fresh ginger
2 tsp, finely grated
Lean pork mince
250 g
Red capsicum
2 medium, cut into 1cm pieces
Lebanese cucumber
1 medium, cut into 1cm pieces
Green shallot(s)
2 individual, thinly sliced
Butter lettuce
20 g, (12 individual leaves)
Instructions

Combine hoisin, sriracha and soy sauce in a small bowl and set aside.

Heat oil in large wok over high heat. Stir-fry ginger for 10 seconds, until fragrant. Add pork, stir-frying for 2-3 minutes to break up mince and brown evenly. Add capsicum, stir-fry until combined, then add reserved sauce mixture and continue stir-frying for a further 1-2 minutes until pork is cooked and mixture is well combined.

Remove from heat, stir in cucumber and shallots. Spoon into lettuce leaves to serve.
