Spicy pork and quinoa stir fry

Bring this super easy stir-fry to life with fresh coriander and a drizzle of fresh lime.


Olive oil

2 tsp

Lean pork mince

500 g

Red curry paste

1 tbs

Quick cup, brown rice and quinoa

250 g

Mixed salad leaves

300 g, superfood stir-fry mix

Lime juice

1 tbs

Fresh coriander

¼ cup(s), leaves


  1. Heat 2 tsp olive oil in a large wok over high heat. Stir-fry pork mince, breaking up any lumps, for 2-3 minutes or until browned. Add curry paste and stir-fry for 1 minute or until fragrant. Add Superfood Stir-Fry Mix. Stir-fry for 2 minutes or until tender.
  2. Meanwhile, microwave quinoa and brown rice following packet instructions.
  3. Add rice and lime juice to wok and stir-fry for 1 minute or until hot. Sprinkle with coriander leaves.
