Ingredients
Olive oil
1 tbs
Brown onion
1 medium, thinly sliced
Red capsicum
1 medium, finely chopped
Shortcut bacon
100 g, chopped
Garlic
3 clove(s), thinly sliced
Ground cumin
1 tsp
Ground paprika
2 tsp
Fresh red chilli
1 whole, seeded, thinly sliced
Canned diced tomatoes
400 g, with basil and garlic
Egg(s)
8 medium
Reduced fat feta cheese
75 g, crumbled
Fresh flat-leaf parsley
¼ cup(s)
Instructions

Heat the oil in a large deep frying pan over medium-low heat. Cook the onion, capsicum and bacon, stirring, for 5-7 minutes or until soft. Add the garlic, cumin, paprika and half the chilli and cook, stirring, for 1 minute or until fragrant.

Add the tomato and ½ cup cold water and bring to the boil. Reduce heat and simmer, uncovered, for 5 minutes or until thickened slightly.

Using the back of a spoon, make 8 small indents in tomato mixture. Carefully crack the eggs into the indents. Simmer, covered, for 5-7 minutes or until the eggs are just set or cooked to your liking. Serve scattered with feta, parsley and remaining chilli.
