Spicy lamb burritos

The beauty of burritos is you can put everything on the table and then let the family serve themselves.


Ingredients
Flour tortilla(s)
200 g, (4 large)
Plain or natural yoghurt, low-fat, no added sugar
120 g
Lean lamb mince
400 g
Olive oil
3 tsp
Brown onion
1 small, finely chopped
Garlic
2 clove(s), crushed
Reduced-salt taco seasoning mix
2 tbs
Fresh coriander
2 tbs, finely chopped, plus extra to garnish
Fresh mint
2 tbs, finely chopped
Lebanese cucumber
1 medium, chopped
Tomato(es)
2 small, chopped
Baby spinach

Instructions

Heat oil in a large frying pan over medium-high heat. Cook onion and garlic, stirring, for 3–4 minutes or until soft. Add lamb and cook, stirring, for 3 minutes or until lightly browned.

Add taco seasoning and ½ cup (125ml) water. Cook, stirring, for 3–5 minutes or until thickened. Remove from heat and stir in chopped coriander.

Combine yogurt and mint in a small bowl. Heat tortillas in microwave following packet instructions. Divide lamb mixture among tortillas and top with cucumber, tomato, spinach, extra coriander leaves and mint yogurt. Roll up and serve.
