Spicy chicken, tofu, broccoli and sesame stir-fry

One to delight health-conscious foodies everywhere, this easy to throw together Asian-inspired dish is packed with crisp veggies and exciting flavour

Ingredients

Firm tofu

200 g, cut into 2cm pieces

Chilli sauce

2 tbs, hot

Garlic

1 clove(s), crushed

Dry soba noodles (100% buckwheat)

160 g

Sesame oil

1 tbs

Skinless chicken breast

500 g, fat-trimmed, cut into 2cm pieces

Green shallot(s)

4 individual, thinly sliced

Red capsicum

1 medium, thinly sliced

Broccoli

350 g, cut into florets

Bok choy

1 bunch(es), chopped

Honey

1 tbs

Soy sauce

¼ cup(s), (60ml)

Sesame seeds

1 tbs, toasted

Instructions

  1. Place tofu in a medium bowl with chilli sauce and garlic and toss to coat. Set aside.
  2. Cook noodles, following packet instructions, or until just tender. Drain. Set aside.
  3. Meanwhile, heat a wok over high heat. Add half the oil and heat for 5 seconds. Stir-fry chicken, in batches, for 3–4 minutes or until browned. Transfer to a bowl. Reheat wok over high heat. Add remaining oil and heat for 5 seconds. Add shallots, capsicum and broccoli and stir-fry for 2–3 minutes or until just tender.
  4. Add bok choy and stir-fry for 2–3 minutes or until just wilted. Add honey, soy sauce, tofu mixture and noodles and stir-fry until heated through. Serve sprinkled with sesame seeds.

Notes

TIPS: To toast sesame seeds, preheat oven to 180°C or 160°C fan-forced. Spread seeds on a baking tray and bake for 3–4 minutes or until lightly toasted.Soba noodles are a long Japanese noodle made from buckwheat and wheat flour. They are available in the Asian section of most supermarkets.
