Swap mash potato for pumpkin in this cinnamon and lemon zest spiced mash.
- 1000 g Pumpkin, raw, (1kg), peeled, deseeded, coarsely chopped
- 1 tsp fresh lemon rind, finely grated
- 1 tsp ground cinnamon, (large pinch)
Cook pumpkin in a large saucepan of boiling water for 10-15 minutes or until tender. Drain well. Return to saucepan. Mash well.
Stir in lemon rind and cinnamon. Season with salt and pepper.
- TIP: Be sure to drain the cooked pumpkin well so the mash isn’t too wet and holds its shape.
