Spiced plum quesadillas

Low-fat ricotta cheese
⅓ cup(s), (80g) smooth
Fresh lemon rind
Canned plums in natural juice, drained
190 g, destoned, tinly sliced
- Spread half the tortillas with ricotta. Sprinkle with rind and half the cinnamon, then top with plum. Sandwich with remaining tortillas.
- Lightly spray a small non-stick frying pan with oil and heat over medium-high heat. Cook 1 quesadilla for 1–2 minutes each side or until golden and warmed through. Transfer to a plate and cover to keep warm. Repeat with remaining quesadillas.
- Cut quesadillas into quarters. Drizzle with maple syrup and sprinkle with remaining cinnamon and extra rind to serve.
TIPS: You can also cook quesadillas in a preheated sandwich press until golden and warmed through. You can use canned apricots or peaches instead of plums.
