Tenderly poach a batch of skinless chicken breasts in an aromatic Chinese-style broth, and you’ve got the perfect foundation for a variety of winning chicken dishes.

Ingredients

Soy sauce

150 ml

Mirin seasoning

2½ tbs

Brown sugar

3 tsp

Garlic

4 clove(s), sliced

Green shallot(s)

4 individual, sliced

Fresh ginger

2 tsp, finely grated

Peppercorn

1 tsp, black variety

Chinese five spice

2 tsp

Skinless chicken breast

1500 g, (10 x 150g chicken breasts)

Instructions

  1. Combine all ingredients, except the chicken, in a large pot and bring to a gentle simmer. Add chicken breasts and top up the pot with enough water to cover chicken. Return to a simmer. Simmer, covered, for 15 minutes or until cooked through.
  2. Use a slotted spoon to transfer chicken to a large shallow dish to cool. Discard the poaching liquid, or strain, cool slightly, then transfer to reusable containers and freeze for later use in soups and stews.
