1 medium
Dijon mustard
½ tsp
Smoked lean turkey
1 slice(s), (18g), thin slice
Cherry tomatoes
1 individual, thinly sliced
Rocket
3 g, (3 baby leaves)
Instructions

Cook egg in a small saucepan of gently boiling, salted water for 10 minutes. Drain. Transfer to a bowl of cold water until cool enough to handle, then peel off shell. Cut in half lengthways.

Spread the cut-side of 1 egg half with mustard. Place turkey over the other egg half, folding slice to fit. Top with tomato and rocket. Cover with the other egg half, mustard-side down. Secure with a toothpick. Serve.
