Smoked salmon pizza

This no-fuss pizza is so easy to assemble and bursting with fresh flavours, it will soon be added to your summer favourites list.


Ingredients
Extra light sour cream
⅓ cup(s)
Flour tortilla(s)
160 g, (4 x 40g tortilla)
Smoked salmon
200 g, coarsely torn
Lebanese cucumber
2 medium, thinly sliced
Red onion
½ medium, thinly sliced
Rocket
2 cup(s), (60g)
Capers, rinsed, drained
1 tbs
Oil spray
1½ x 3 second spray(s)
Instructions

Heat a large non-stick frying pan over medium-high heat. Lightly spray 1 tortilla on both sides with oil. Cook for 1–2 minutes each side or until golden. Transfer to a serving plate. Repeat with remaining tortillas.

Spread tortillas with half the sour cream. Top with cucumber, salmon, onion, rocket and capers. Serve with remaining sour cream.
