Smoked salmon, lemon and snow pea sprout pizzas

This light, fresh pizza is perfect for warm nights.

Ingredients

Olive oil

1 tbs

Garlic

1 clove(s), crushed

Fresh dill

1 tbs, chopped, extra sprigs to serve

Wholemeal lebanese bread

2 small, (2 x 75g)

Pizza blend cheese

60 g, grated

Fresh lemon rind

1 tsp, finely grated

Cherry tomatoes

200 g, grape variety, halved

Smoked salmon

150 g, Sliced

Snow pea sprouts

20 g

Lemon(s)

1 medium, cut into wedges, to serve

Instructions

  1. Preheat oven to 200°C. Combine the oil, garlic and chopped dill in a small bowl.
  2. Place the bread on 2 baking trays. Brush the olive oil mixture over bread. Sprinkle with cheese. Top with lemon rind and tomato. Bake for 10-12 minutes or until the bread is crisp and golden. Top with smoked salmon, snow pea sprouts and extra dill. Serve with lemon wedges.

Notes

SERVING SUGGESTION: Salad of 100g baby spinach leaves, 1 Lebanese cucumber, thinly sliced, and 100g snow peas, thinly sliced. Drizzle with 2 tsp white balsamic vinegar.
