Ingredients
Smoked salmon
8 slice(s), (8 x 25g slices) halved
97% fat-free cottage cheese
160 g
Fresh lemon rind
1 tsp
Rocket
15 g
Instructions

Combine the cottage cheese with the rind in a medium bowl. Season with salt and pepper.

Place the smoked salmon on a clean board. Arrange the rocket (trimming the ends so it pokes out from only 1 side) and 2 teaspoons of cheese mixture over each slice of salmon. Roll to enclose filling. Arrange on a serving plate.
