Smoked salmon and coleslaw on rye

Ingredients
Light rye bread
8 slice(s), toasted
Smoked salmon
200 g
Coleslaw mix, without dressing
500 g, (1 cup)
99% fat-free, plain Greek yoghurt, unsweetened
4 tbs
Dijon mustard
4 tbs
Pickled gherkin, drained
4 individual, (dill), thinly sliced
Instructions

Combine the mustard and yoghurt in a medium bowl. Add the coleslaw mix and toss to combine.

Top one piece of toast with one quarter of the coleslaw mixture, salmon and gherkin. Top with another piece of toast to serve. Repeat with the remaining ingredients to make 4 sandwiches.
