Puff pastry makes the perfect case for crunchy greens and lemony chicken. Serve as a pre-dinner appetiser or a cold canapé at a party


Ingredients
Oil spray
1 x 3 second spray(s)
Reduced-fat puff pastry
65 g
Celery
1 stick(s), stick
Cooked skinless chicken breast
70 g, smoked
Green shallot(s)
1 individual, green
Fresh flat-leaf parsley
2 tbs, finely chopped
Light whole egg mayonnaise
1 tbs
Fresh lemon rind
1 tsp, grated
Lemon juice
2 tsp
Mustard
1 tsp, (American)

Preheat oven to 200°C or 180°C fan-forced. Lightly spray an 8-hole (1½ tbs/30ml capacity) mini muf f in tin with oil. Cut eight 6.5cm circles fro 1 sheet frozen reduced-fat puff pastry. Line prepared holes with pastry. Bake for 10 minutes or until pastry is golden. Cool.

Meanwhile, combine chicken, celery stick, shallot, parsley leaves, mayonnaise, lemon rind, lemon juice and American mustard. Spoon chicken mixture into cooled pastry cases. Serve.
