Adding slices of smoked chicken to a traditional coleslaw takes this all-time favourite salad from a side serving to a main meal

Ingredients

Smoked chicken breast with skin

2½ medium, (400g), sliced

Savoy cabbage

1 cup(s), (white), shredded

Carrot(s)

2 medium, cut into matchsticks

Green shallot(s)

1 individual, thinly sliced

Low-fat mayonnaise

¼ cup(s), (75g)

Lemon juice

1 tbs

Mustard

2 tsp, (American)

Instructions

Place chicken and vegies in a salad bowl. Whisk mayonnaise, juice and mustard in a jug, then drizzle over salad.

Season with salt and ground black pepper, tossing well to combine. Serve.
