Simple fried rice with egg

Simple is in the name – and simple this recipe is! Whip up a healthy fried rice in no time any night of the week.


Ingredients
Dry jasmine rice
½ cup(s), (100g)
Sunflower oil
2 tsp, or canola oil
Green shallot(s)
2 individual, thinly sliced
Carrot(s)
1 medium, grated
Frozen green peas
⅓ cup(s), (40g) thawed
Egg(s)
2 medium, lightly beaten
97% fat-free deli sliced ham
50 g, chopped
Soy sauce
1 tbs
Instructions

Cook rice following packet instructions or until just tender. Drain well (see note).

Heat a wok over medium-high heat. Add oil and heat for 20 seconds. Stir-fry shallots for 30 seconds. Add carrot and stir-fry for 30 seconds. Add peas and stir-fry for 2 minutes. Add rice and stir-fry for 1 minute.

Push mixture to 1 side of wok and pour egg into empty side. Cook egg, without stirring, for 1 minute or until set underneath. Using a spatula, draw in edges of egg, allowing uncooked egg to run out to the sides. When egg is almost set, stir-fry egg and rice mixture until combined.

Add ham and drizzle with soy sauce. Stir-fry for 30 seconds or until heated through. Serve.
