Ingredients
Fish sauce
2 tbs
Palm sugar
1 tbs, grated
Sunflower oil
1 tbs
Beef rump steak, raw
480 g, (buy 600g) fat trimmed, sliced thinly
Lemon juice
⅓ cup(s), (80ml)
Pepper
1½ tsp, (white)
Salt
½ tsp, (flakes)
Red onion
1 medium, cut into wedges
Butter lettuce
720 g, (1x lettuce whole)
Watercress
1 cup(s), (1/2 bunch)
White radish
6 individual, finely shredded
Instructions

Combine fish sauce, sugar and half the oil in a glass or ceramic dish. Add beef and toss to coat. Cover and refrigerate for 20 minutes. Combine juice, 2 tablespoons water, white pepper and sea salt in a small jug. Set dressing aside until required.

Heat a wok over high heat. Add 1 teaspoon oil and heat for 20 seconds. Stir-fry onion for 2 minutes or until softened. Transfer to a bowl. Reheat wok over high heat. Add remaining oil and heat for 20 seconds. Stir-fry beef mixture, in batches, for 3 minutes or until browned and cooked to your liking.

Arrange lettuce and watercress on serving plates. Top with beef, onion and radish. Drizzle with dressing to serve.
