Raw veggies are the star in this fresh and spicy no-cook dish. Full of crunch and flavour, it’s great as a light lunch option or simple no-cook dinner on hot summer nights.


Ingredients
Red cabbage
½ whole, shredded
Zucchini
1 large, spiralised (see tip)
Carrot(s)
1 large, spiralised
Green shallot(s)
2 individual, thinly sliced
Plain peanut butter powder
2 tbs
Soy sauce
2 tbs
Rice wine vinegar
1 tbs
Brown sugar
2 tsp
Sesame oil
1 tsp
Fresh ginger
2 tsp, finely grated
Sriracha sauce
2 tsp
Instructions

Toss cabbage, spiralised vegetables and shallots in a large serving bowl.

To make dressing, whisk all ingredients in a bowl until creamy and combined. Add satay dressing to vegetables, toss again to coat vegetables evenly, then serve.
